2 lb beef short ribs

2 Tbsp Soy sauce

1 Tbsp Worcestershire

1 tsp balsamic vinegar

1 liter Beef stock

1 whole white onion

1 head of garlic

3 drops of sesame oil

5 oz red wine

1oz tomato paste

2 oz aji-mirin or rice wine vinegar(optional)

1 tsp ume vinegar (optional)

Salt and pepper to taste

Chopped scallions

Oil to sear

Minced Granny Smith apple (optional garnish)



Heat a medium pot on the stovetop over high heat with oil, sear short ribs after seasoning them with salt and pepper, for about 5 minutes on all sides. Remove the short ribs from the pan, add chopped onion and chopped garlic and saute for 5 minutes, then deglaze with the red wine. Add short ribs back into the pan and all other ingredients except scallions, once liquid is simmering, seal the pot and cook for approximately 1.5-2.5 hours.

Remove short ribs carefully, and plate over your vegetables of choice, with bread, or over pasta. Garnish with an ample amount of scallions
